Take a peeled piece of fruit and insert a knife into the flesh, following the line of the pith separations. Cut half way into the orange, then stop. Move to the next line on the fruit, and repeat the process.
A beautiful wedge should just pop out. Be careful not to cut through the pith. The pith is much tougher than the flesh itself. If you are gentle, you should have no problems.
Repeat this process, folding the pith flaps back as you go, until you are left with an orange skeleton, which is full of leftover juices.
Squeeze the leftover pith onto the oranges (it helps preserve them, and later makes a tasty beverage or sauce).
Remove any leftover seeds.
